Donut Muffins

The word "donut" added to "muffin" automatically categorizes these muffins as "unhealthy", and you do know that most of the time, "unhealthy" foods are more delicious than "healthy" ones right (well to me anyway).


These donut muffins are coated with a mixture of sugar and cinnamon and I was surprised at how much these muffins resemble the taste of donuts even though they are not fried.


Unfortunately, I overmixed these donut muffins so they  turned out a bit chewy (putting them in the good ol' microwave for a few seconds fixes that), but I imagine if the timing was corrected they would've been perfect. 


BEWARE, there is a LOT of sugar involved here, so make these only if you are:


1. Sick of your healthy diet and need a break from it;
2. Looking for a sugar rush; or
3. You're tired of making typical muffins.





Donut Muffins - adapted from allrecipes.com
(Yields 24 muffins)


Ingredients

  • 1/2 cup white sugar
  • 1/4 cup butter, melted
  • 3/4 teaspoon ground nutmeg
  • 1/2 cup milk
  • 1 teaspoon baking powder
  • 1 cup all-purpose flour
For coating

  • 1/4 cup butter, melted
  • 1/2 cup white sugar
  • 1 teaspoon ground cinnamon

Instructions
1.  Preheat oven to 375 degrees F (190 degrees C). Grease muffin trays.
2.  Mix 1/2 cup sugar, 1/4 cup butter, and nutmeg in a large bowl.


3.  Stir in the milk, then mix in the baking powder and flour until just combined
4.  Fill the prepared muffin cups about half full.


5. Bake in the preheated oven until the tops are lightly golden, 15 to 20 minutes.


6.  While muffins are baking, place 1/4 cup of melted margarine in a bowl. In a separate bowl, mix together 1/2 cup of sugar with the cinnamon.


7.  Remove muffins from their cups.


8. Dip each muffin in the melted butter, and roll in the sugar-cinnamon mixture. Let cool and serve.


The funnest part of the whole process is rolling the muffins in melted butter and the sugar/cinnamon mixture =)

Mmmm fried anything is better than non-fried anything. Even if they weren't chewy I'd throw them in the microwave...makes it so much better:)

@Liana - That is true! I find any baked goods better when microwave for a bit :) even those that didn't turn out so well LOL

I'm not sure if this is the exact same recipe since I remember having 2 or 3 different recipes for donut muffins LOL~ Nevertheless doesn't matter which one you use I'm sure you will do a fabulous job!
